Cheese Puffs

Ingredients:

  • 1 cup cheese
  • ½ cup butter/margarine
  • 1 cup potato mash
  • 4 large eggs

Method:

Preheat oven to 400º Grate the cheese. Set aside. Place little water, butter in a saucepan. Bring to full boil over medium heat. Turn off the heat and add the potato mash stirring until mixture leaves sides of pan and forms a ball. Remove from fire. Add eggs, one at a time, beating well after each addition. Stir in ½ cup of the grated cheese. Drop the mixture by small spoonful’s on a greased baking sheet to make balls about 1.5 inches in diameter. Sprinkle remaining cheese on puffs. Bake at 4000 for 15-20 mins until golden brown. Prick the puffs with a fork and return to turn off the oven for 5 mins to crisp. Serve warm. Makes 3 dozen puffs
