• 2 egg yolks
  • 1½ Cups of salad oil
  • ½ cup vinegar (Gluten free)
  • 2 teaspoons juice of lime
  • ½ teaspoons salt
  • ¼ teaspoon chili powder
  • 1/4 teaspoon mustard powder
  • Pinch of sugar


Beat egg yolks lightly and stir in salt, sugar, mustard and chili powder mix well & add in oil drop by drop, juice of lime and vinegar. Keep adding alternately till oil, lime and vinegar are mixed in (when mayonnaise begin to thicken, oil may be added in teaspoons instead of drops) to obtain creamy consistency; beat in table spoon boiling water as soon as mayonnaise is ready. Chill before serving.
